quick fry donuts

    2 cups flour
    2 tsp baking powder
    1/2 cup sugar
    1/4 tsp grated nutmeg
    3 tbs butter, melted
    1 egg
    6 tbs milk

    Sift the flour, baking powder, half the sugar, the nutmeg and 1/2 tsp into a mixing bowl.

    Beat in the butter and egg, then half the milk.

    Gradually beat in the remaining milk to make a smoothe but firm dough.

    Chill for 15 min.

    Roll out the dough to about 1 cm (1/2 in) thick.

    Cut into 3in circles and cut out the centres to make rings and holes.

    Leave for 10 min, then deep fry in oil heated to 190 C (375 F), for about 5 min or until golden brown.

    Drain the doughnuts on paper towels and sprinkle with remaining sugar.
