Meringue Cookies

    Heat oven to 350 degrees.

    2 egg whites (room temperature)
    1/2 tsp cream of tartar
    3/4 c. granulated sugar
    1 c. semi-sweet chocolate chips
    1/8 tsp peppermint extract or use mint chocolate chips

    Beat egg whites until frosty (stiff peaks). Add cream of tartar. Add sugar very gradually, beating constantly to stiff peaks. Fold in chocolate chips. Drop cookie mixture from teaspoon onto parchment paper on cookie sheet. Put in oven. Turn off oven. Leave in overn 12 hours or overnight.
