1 1/2 tsp paprika
1 tsp salt
1 tsp granulated garlic
1/2 tsp ground white pepper
1/2 tsp ground red pepper
1 lb catfish fillets,or any firm,whitep-fleshed fish
1/2 c buttermilk
1 Tbsp lemon juice
2 c corn flakes,coarsely crushed
Preheat oven to 450. In small bowl, mix 1/2 tsp paprika,salt,garlic,white pepper, and red pepper and sprinkle over both sides of the fish. In medium bowl, mix buttermilk and lemon juice. Dip fish in milk, then dredge in corn flakes. Spray a baking sheet with nonstick spray and arrange fish about 1 inch apart on sheet. Sprinkle remaining paprika over fish and bake for 20 minutes,or until fish flakes easily with fork.
