Double Spinach Bake

    8 oz spinach fettuccine noodles, cooked
    1 green onion
    1 c sliced mushrooms
    1 clove garlic, minced
    4-5 c fresh spinach, chopped or 1-10oz frozen package, thawed and drained well
    1 tbsp of water
    1-15oz non-fat ricotta cheese
    1/4 c skim milk
    1 egg
    1/4 c reduced fat swiss cheese
    1/2 tsp of both nutmeg and pepper

    Sautee onion in non stick pan. Add mushroom and garlic. Add spinach and water. Cook until tender.

    Mix ricotta, milk, nutmeg, peper and egg together. Combine with spinach mixture. Sprinkle swiss cheese on top and bake in 350 degree oven for 25-30 min.

    Makes 6 1c servings
