Never Fail Divinity

    1/4 Cup Water
    1 1/2 Cup Sugar
    1/4 Tsp. Cream of tartar
    1/8 Tsp. Salt
    1 Tsp. Vanilla
    7 Ounce Marshmallow cream
    1 Cup Chopped pecans

    Combine water, sugar, cream of tartar and salt. DO NOT STIR! Bring to a rolling boil and boil until candy thermometer reaches 248.

    Place marshmallow cream in small bowl. Beat at low speed with electric mixer while gradually pouring in hot syrup. Add vanilla. Beat until candy loses it gloss and holds it shape when dropped by a spoon. If mixture is underbeaten it will not hole its shape and if it is overbeaten, it becomes dry. Add nuts.

    Drop from spoon onto waxed paper. Cool and store in airtight container.
