Meatball Tortilla Soup

    1 lb ground beef
    1 egg, slightly beaten
    2 Tbsp bread crumbs
    ¾ tsp salt
    ½ tsp chili powder
    1 Tbsp oil

    For meatballs, combine first 6 ingredients except oil. Shape to form 24 or more meatballs about 1" in diameter. In large skillet, brown meatballs on all sides in oil. Remove from pan with slotted spoon to a bowl.

    SOUP:
    1 C sliced celery
    2 C tomato juice or V-8
    1 C water
    2 tsp chili powder
    ½ C chopped green pepper
    ½ C chopped onion
    ½ tsp salt
    1 beef bouillon cube

    Place celery, onion, and green pepper in large soup pan. Add tomato juice, water, chili powder, bouillon cube and salt. Bring to a boil and add meatballs. Cover and let simmer for an hour or so until vegetables are cooked through. Ladle soup into bowls; crumble tortilla chips and add to each bowl.

    NOTE: Fresh corn or carrots may also be added (cut into small pieces) and for a different flavor, use roasted vegetable broth from Trader Joe’s in place of bouillon and water. Instant rice may be used in place of bread crumbs in meatballs (approximately ½ cup). For a super topping, add a touch of green onion and cheese.
    This soup may also be done in a Crock Pot--about 4 hours on low.
