Recipe Preparation Level: moderate
8 2- inch thick loin lamb chops
Coarse (Kosher) salt and fresh-ground pepper to taste
About 1/2 cup prepared honey mustard (preferably Nance's brand)
Preheat oven to 325*. Dry lamb chops on paper towels. Sprinkle both sides of chops with salt and pepper. Line a broiler pan with aluminum foil and place chops on a lightly oiled rack set in the broiler pan.
