Honey-Mustard Glazed Lamb Chops

    8 2- inch thick loin lamb chops
    Coarse (Kosher) salt and fresh-ground pepper to taste
    About 1/2 cup prepared honey mustard (preferably Nance's brand)

    Preheat oven to 325*. Dry lamb chops on paper towels. Sprinkle both sides of chops with salt and pepper. Line a broiler pan with aluminum foil and place chops on a lightly oiled rack set in the broiler pan. Roast 45 minutes or until a meat thermometer inserted into the thickest part registers 145* (medium rare). During the last 5 minutes of roasting generously brush each chop with about 1-1/2 tbsps. honey mustard. After removing from oven brush both sides of chops again with remaining honey mustard. Serves 4 generously.
