Oven Fried Fish

    1 pound fish fillets ( cod, sole, snapper, etc.
    1 5-1/4 oz, box plain or wheat Melba Toast
    2 tbsps. olive oil
    2 eggs
    1 tbsp Dijon mustard
    1/2 tsp. dried oregano
    1/2 tsp. salt
    1/4 tsp. fresh ground pepper
    1/8 tsp. cayenne (opt.)

    Put Melba Toast into a food processor and process to a fairly fine crumb. Place in a dish. Cut fish into pieces 2 inches wide. Put onto a paper towel-lined plate to drain for 10 minutes. Oven to 450*. Line a metal baking pan with aluminum foil; set a large wire rack over pan or use two racks so that at least 2 inches of space remains underneath to vacilitate flow of heat under fish as well as over. Spray rack lightly with no-stick cooking spray.
    Drizzle olive oil over crumbs and mix with a fork until evenly blended. In a shallow bowl, whisk eggs and all the spices. Working with one piece of fish at a time, dip into egg mixture letting excess drip off and then into crumb mixture until well coated. Place on prepared pan and place on center oven rack. Bake about 12 minutes or until fish tests done. Serve with lemon wedges. Serves 4.
