Spinach Enchiladas

    2 pkgs spinach, chopped
    1/2 onion, chopped
    1 cup fresh mushrooms, sliced
    1 cup chopped green chilies
    2 packages corn tortillas
    1 cup cheddar cheese
    8 slices bacon

    white sauce:
    1 tablespoon butter
    1 tablespoon flour
    1 cup milk
    1/2 teaspoon garlic powder

    Chop onion and cook with spinach, mushrooms, green chilies. Meanwhile, fry your bacon. Add bacon to veggies. Start preparing tortillas by adding first the cheese, followed by a couple spoonfuls of mixture. When done rolling tortillas, make white sauce topping. Take a small pan and add butter. Then add flour, stir til lumps are gone. Add milk. Stir til thick. Pour over enchiladas. Top with cheddar cheese. Bake about 35 minutes at 350F.
