Morel Mushroom Soup

    1-1 1/2 pounds fresh morel mushrooms
    1 stick butter
    2 T. onion, chopped fine
    5 T. flour
    5 cups beef stock
    1 cup heavy cream
    salt and pepper to taste

    Brush any dirt or sand off morels, chop into medium pieces. Cook onion in 2T of butter till soft and translucent. Add morels and more butter and cook till soft. In a pot melt remaining butter and add flour, stirring constantly to form a roux. Remove from heat after cooking 30 seconds. Add heated stock to the roux and whisk rapidly to blend roux with stock. Place stock back on stove and stir till it begins to thicken. Then add mushroom and onions. Heat 15 minutes, stirring so it doesn't burn. Take off heat and add cream and salt and pepper. Serve with chopped chives sprinkled over.
