Peanut Brittle

    2 cups sugar
    3 cups peanuts, raw
    3/4 cup white Karo syrup
    1/4 cup water
    dash of salt
    3 teaspoons baking soda
    Combine sugar, peanuts,Karo, water, and salt. Cook on medium heat, stirring continuously until peanuts are very brown, to hard crack stage on a candy thermometer. Remove from heat, add soda and stir until desired color is achieved. Pour on a well buttered baking sheet and spread as thin as possible. Make sure you have your pan prepared before you begin cooking. Mixture is very hot, so be extra careful. Set brittle in a cool place for several hours. Break into desired pieces and store.
