Baked Chicken with Onion, Garlic and Rosemary

3 1/2 - 4 1/2 lb. chicken, cut up (I used chicken breasts)
3 medium onions, cut into rings
2T olive oil
1 1/2 lb. quartered potatoes
6 - 12 garlic cloves
2t dried rosemary
Preheat oven to 400 degrees F - place rack in center of oven. Salt and pepper chicken. Toss everything except chicken together. Spread the onion mixture into a roasting pan just large enout to hold the chicken in a single leayer. Arrange chicken pieces, skin up, on top. Drizzle olive oil over chicken. Bake 45-55 minutes or until juices run clear. Serves 4 - 6.
