Cream of Spinach Soup--Low fat

10 oz. package of frozen chopped spinach
3 chicken boullion cubes
1 1/2 c. water
3 tablespoons light butter or margarine
1/4 c. flour
3 c. 1% milk
Salt & Pepper
1) Combine water, boullion, and spinach in a medium saucepan. Bring to boil and cook until tender.
2) In large saucepan, melt butter and whisk in flour until smooth. Whisk in milk and heat through. Season with salt & pepper. Stir in spinach mixture. Heat through, but do not boil.
