1 lb ground beef
2 garlic cloves- chopped
1/2-1 cup carrots
2 celery stalks- chopped
2 tsp olive oil
2 cups beef broth
1 (32oz) can diced tomatoes
1 (16oz) can kidney beans-drained
1 (16oz) can cannoloni beans-drained
1 tsp each: basil oregano thyme
1 cup (dried) ditalini or elbows
Brown beef, drain and set aside. In another skillet add oil and saute carrotsgarlic onion and celery. When onion is translucent add tomatoes, broth and cooked beef. Bring to boil. Add spices
(can also add some parlsey) and salt and pepper to
taste. Simmer 45 minutes. Add drained beans to pot.
In seperate pot cook pasta until al dente. Add cooked pasta to soup mixture .
