    lemoncello....4 lemons with thick skin; 3 cups unflavored vodka; 3/4 cup granulated sugar......Soak lemons in bowl of cold water for 1/2 hour...dry with paper towels...peel carefully with vegetable peeler,so that no white, inner skin remains attached to the peel. Put lemon peels in large mouthed jar and pour 2 cups of vodka over them. Close jar and let stand in a dark place for 72 hours. Then.. Combine 2 cups of cold water with the sugar in a saucepan over medium heat until boiling. Remove and let cool completely (about 2 hours). Add the sugar/water mix to the jar with lemon peels and mix well. Then, to remove impurities, filter thru a coffee filter or several layers of paper towels into a bottle or jar.Put lemon peels back into the liquid and add the remaining alcohol. Close container again and let it stand in a dark place for 36 hours. Then filter contents again returning only the liquid to the bottle. Let stand for one week before using. Makes about 5 cups.
