Sweet Potato Casserole

2 - 10 oz. can sweet potatoes (large cans)
4 - eggs
2 - c. sugar
1 - c. evaporated milk (can substitute fat free if desired)
2 - tsp. baking powder
1 - tsp. vanilla
1 1/2 - tsp. cinnamon
1 - 7 oz. can coconut (I prefer a little less)
2 - sticks butter or margarine (I use 1 stick of margarine)
Blend together (I drain the sweet potatoes and mash them with a potato masher before blending in the other ingredients) and pour in baking dish (I usually use a disposable lasagna pan).
TOPPING: Mix 1/2 c. brown sugar and 1/2 c. self-rising flour together with 1 c. of chopped nuts. Sprinkle mixture on top of casserole and chip 1/2 stick of butter or margarine on top.
Preheat oven to 350 degrees and bake for 1 hour.
