Beef Teriyaki

    BEEF TERIYAKI

    2 pounds London broil, cut 1" thick (or eye of the round roast)
    1 small onion, sliced
    1 teaspoon fresh ginger root, chopped
    1 teaspoon candied ginger, chopped
    1/2-cup soy sauce
    1 tablespoons rice vinegar
    1/4 vegetable oil
    1 to 2 cloves garlic, minced

    Slice the beef into 1/4" slices. Place beef and onion in a zip-lock bag.
    Add the rest of the ingredients; turn to coat. Marinate in the refrigerator
    for 24 to 72 hours, turning periodically. Preheat broiler or grill. Drain
    the beef, reserving the marinade. Broil to desired doneness. (4-6 minutes),
    basting occasionally with the
    reserved marinade. Sauté onion in small skillet. Makes 5 servings.
