Things Go Better with Cola Brisket

    1 beef brisket(about 4-6#) trimmed (see note)
    2 tablespoons oil
    1 cup onions, chopped
    1 cup celery, chopped
    Salt and Pepper to taste
    2 teaspoons paprika
    2 crushed garlic cloves
    1/2 cup ketchup
    1/4 cup hot water
    1 tablespoon onion soup powder
    1 package (1 1/2 ounces)dry spaghetti sauce mix
    1 cup cola

    Preheat the oven to 350F. Place the meat in a lage roasting pan and cover with the oil on all sides. Sprinkle with the onions and celery. Season with salt, celery and paprika. Place the crushed garlic cloves on top. Mix the ketchup with the hot water, onion soup powder and dry spaghetti
    sauce mix to dissolve the dry ingredients. Add the cola to the ketchup mixture. Pour the mixture over the meat and cover with foil.
    Roast the meat 2 1/2-3 hours, uncovering to baste every 20-30 minutes. Remove from the oven and cool slightly in the pan. Cover the pan and refrigerate the brisket in the pan juices overnight.
    Makes 8 servings.
    Cook's note: If your regular supermarket doesn't sell brisket, ask your butcher to prepare one for you, or try a kosher meat market. Some markets sell a whole brisket with the flat end and the point. Use the flat end.
