Tomato Pepper Jam

    2 1/4 lbs ripe tomatoes
    1 1/2 ts grated lemon rind
    1/4 cup lemon juice
    2+ chopped hot peppers
    6 cups sugar
    1 pkg. fruit pectin

    Peel and chop tomatoes. Bring to boil then simmer 10 minutes. Should measure 3 cups. Add pepper, rind, juice, sugar and mix well. Over high, bring to rolling boil, boil hard while stirring for 5 minutes. Remove from heat and stir in pectin. Skim with metal spoon. Stir and skim for 5 minutes. Ladle into 1/2 pint jars and seal.

    Should make 9 1/2 pts.
