2 cups fine shredded zucchini (let drain in colander awhile) 3/4 cup flour 1/2 teaspoon sugar 1/2 teaspoon salt 3 tablespoons olive oil 4 teaspoons baking powder 1/4 cup butter, melted Preheat grill. In a large bowl, beat eggs then add zucchini and mix well with a fork. Add flour, sugar, salt and oil, and stir to blend. Finally, add baking powder and mix. Should be like heavy whipping cream. Spoon about 2 tablespoons for each pancake on hot grill. Cook til there aren't any bubbles - about 2 minutes; turn over and cook 2 minutes more.
