Martha's Oven Dried Pineapple

    Fresh fruit is a transitory pleasure; it’s available all the time but exists in a state of ripe perfection for only a few days. One way to preserve fruit and intensify its sweetness and flavor is to dry it. There are a number of ways to dry fruit into a nutritious snack: in the sun, in machines specially made for drying, or—perhaps the simplest method—in an oven.

    Makes about 2 dozen

    1 pineapple, peeled and sliced crosswise 1/8 inch thick
    2 tablespoons sugar

    1. Heat oven to 250°. Line two baking sheets with Silpats (French nonstick baking mats). Place pineapple slices in a single layer on prepared baking sheets. Sprinkle sugar over pineapple slices.

    2. Bake until edges are golden brown, 2 to 2 1/2 hours. Transfer to a wire rack to cool completely. Store in an airtight container for up 2 days.
