Chocolate Peanut Butter Pie

    1 12.3 oz pkg. extra-firm silken tofu
    2-1/2 Tbsp water
    1/2 C plus 1-1/2 Tbsp sugar
    1/2 cup plus 1-1/2 Tbsp dutch cocoa powder (unsweetened)
    1-1/4 tsp. vanilla
    1/8 tsp. vanilla
    1/8 tsp. salt
    1/2 C. smooth or crunchy peanut butter
    2 Tbsp. chopped roasted peanuts
    1 baked and cooled 8 or 9-in pie crust

    Place all ingredients except pie crust in a food processor or blender and process until very smooth. pour into cooled crust and smooth the top. Garnish with roasted peanuts. Chill and serve with whipped topping or whipped cream.

    Per serving without whipped topping or cream: 324 cal; 11 g. pro;33 g carb; 18 g fat (5 sat; 8 monounsat; 5 polyunsat); 0 mg chol; 272 mg sod; 3 g fiber; 49 percent cal. from fat.
