Best Butter Tarts

    PASTRY

    2 cups flour
    1 teaspoon salt
    1 cup butter or hard margarine
    1/4 cup ice-cold water

    Sift flour and salt, cut in butter or margarine with pastry cutter. Add water and mix with a fork. Gather up and wrap in plastic wrap and chill 30 minutes.

    FILLING

    2 eggs
    1 cup brown sugar
    1/2 teaspoon salt
    2 teaspoons white vinegar
    1/2 cup maple syrup
    1/3 cup melted butter
    2/3 cup chopped walnuts
    1/2 cup raisins
    1/2 cup chopped dates

    Preheat oven 350 degrees.
    Beat eggs in bowl, gradually add sugar.
    Beat till light and fluffy. Add salt, vinegar and maple syrup and melted butter. Mix till combined. Stir in nuts, raisins, dates.

    Roll out dough.
    Line tart tins with dough.
    Fill 2/3 of the filling.
    Bake 25 to 30 minutes till firm.

    Makes 2 1/2 doz.
