Cheesy Vegetable Soup

    4 chicken bouillon cubes
    4 cups water
    1 cup diced celery
    1 cup diced onion

    Cook 20 minutes over low heat - covered.

    Then add:

    2 & 1/2 cups diced raw potatoes
    1 bag (16-20 oz.) of frozen veggies (broccolli, carrots and cauliflower) Note: I use fresh vegetables.

    Cook 20 minutes more on low heat.

    Then add: 2 cans Cream of Chicken soup. Mix until smooth.

    Last: Add 1 pound Velveeta Cheese (I use a little less). Heat on low and stir until cheese melts.

    This is wonderful and so impressive if you are having company.
