Old El Paso Bean & Cheese Enchaladas

    1 can Old El Paso Refried Beans
    1 can Old El Paso Enchalada Sauce
    2 1/2 c. Shredded Cheddar Cheese
    4 Soft Taco Shells
    Shredded Lettuce, optional
    Chopped Tomato, optional
    Black Olives, optional
    Sour Cream, optional

    Preheat oven to 350F. Fill each shell with 1/4 can beans, 1/3 c. shredded cheddar and 2 TBSP enchalada sauce. Roll up and place in a lightly greased 9x9" baking dish, seam side down. Pour remaining sauce over enchaladas, and top with remaining cheese. Bake 10-15 minutes, until cheese is thoroughly melted. Top with garnishes, if desired. Serve with Spanish Rice. Serves 4.
