Leg of Lamb with Haricot Beans

    2 cups haricot beans
    2kg (4lb) leg of lamb
    4 sprigs fresh rosemary
    4 cloves garlic, sliced
    1/4 cup olive oil
    60g (2oz) butter
    1 clove garlic, crushed
    1 med onion, chopped
    2 bacon rashed, shopped
    4 green shallots (spring onions), chopped
    2 tsp chopped fresh rosemary
    2 x 400g (10-11oz) cans tomatoes
    2 tbls tomato paste
    1 tsp sugar

    Place beans in a bowl, cover with cold water, cover, stand overnight; drain.
    Cut 4 slits in top of lamb, insert rosemary sprigs and sliced garlic. Place lamb on wire rack in baking dish, pour over oil. Bake, uncovered, in mod hot oven 15mins. Reduce heat to mod and bake further 1 3/4 hours or until lamb is cooked as desired.
    Meanwhile, add beans to large pan of boiling water, simmer, uncovered, about 1 hour or until tender, drain.
    Melt butter, add crushed garlic, onion, bacon and shallots, cook, stirring, until onion is soft. Stir in chopped rosemary, undrained crushed tomatoes, paste and sugar, simmer, uncovered, until thickened. Add beans, stir over heat until beans are heated through. Serve lamb with haricot beans.
