Panfried Filet Mignon

    For the fine herbes butter:
    2 T softened butter
    1 T fines herbes
    1 T oil
    Salt and freshly ground pepper
    2 (8 oz) filet mignon

    With a fork, combine the butter and herbs. Form into a ball, wrap in waxed paper, and chill. Heat a stainless steel skillet until very hot but not smoking. Add oil. Sprinkle salt and pepper on both sides of the steak. Place in the skillet and cook for 3 min per side for medium rare. Slice the butter in 1/2 and place 1 piece on top of each steak.

    Yield: 2 servings
