Filled or Dessert Pancakes

    This is a traditional Czechoslovakian dish that we used to have on special breakfasts and brunches. Be warned that this is a very rich dish.

    Filling:

    2 egg yoks
    1/4 c. sugar
    1/4 t. salt
    2 c. packed, drained cottage cheese
    1/4 c. rasins (optional, I don't use them)
    1/4 t. lemon rind

    Mix and beat until thick.

    Batter:

    1 c flour
    1 1/2 t. sugar
    1/8 t. salt
    1 egg
    1 c milk
    1/2 t. vanilla

    Mix dry batter ingredients, make well in center and add liquid ingredients. Mix well. Lightly butter small skillet and pour in about 3 T. batter. Tilt skillet to spread batter over bottom of skillet. Fry until lightly browned. Loosen edges and turn and brown other side. While cooking next pancake, spread finished pancake with 2 T of fillinf and roll. Place each roll in buttered dish about 9 x 13. When complete, spread 2 C sour cream over tops of rolls and bake uncovered in 350 degree oven. Serve hot with apricot or prune jam if desired.
