Sloppy Ribs

    1 cup brown sugar
    1/2 cup paprika
    2 tbs ground black pepper
    2 tbs salt
    2 tbs chili powder
    2 tbs garlic powder
    2 tbs onion powder
    1-2 tsp cayenne

    3 slabs of ribs (about 6-9 lbs), either baby back or spare ribs
    If using baby backs, strip membrane from inside of ribs using Phillips screwdriver or oyster knife.

    BBQ sauce, if desired

    Apply one third of rub evenly to ribs the night before. Bag and refrigerate overnight.

    Before barbecuing, take ribs from fridge and sprinkle with more (not all) rub. Let stand for 45 minutes to sweat at room temperature.

    Cook spare ribs about 4 hours;
    baby backs about 2 1/2 hours. Sprinkle with remaining rub about halfway through.

    If they burn because of sugar and higher heat, sauce the ribs or apply paste of brown sugar and water. Just makes them sweeter.

    Increase brown sugar to 1 1/2 cups if you're not planning to use sauce at all.
