Beef Brisket barbecue

    Rub:
    2 tbs hickory flavored salt
    2 tbs brown sugar
    2 tbs paprika
    2 tbs chili powder
    2 tbs ground black pepper

    Marinade:
    2 tbs of rub (above)
    12 oz beer (darker the better, I think)
    1 med onion chopped (1 1/2 tbs onion powder)
    1/2 cup cider or white vinegar
    1/4 cup canola oil
    2 canned chipotle chiles plus 2 tsp adobo sauce
    2 tbs pure liquid smoke

    4 lb trimmed beef brisket
    BBQ sauce (tomato based, sweet)

    Combine marinade ingredients in blender and puree. Place brisket in plastic bag and pour marinade over it. Let sit overnight in refrigerator.

    Before barbecuing, take brisket from fridge, drain and pat with 3 tbs of rub. Smoke for 3 hours. Wrap in heavy duty foil and sprinkle with remaining rub. Cook additional 1 1/2 - 2 hours, until well done and tender.

    Let sit at room temperature 15 minutes. Slice against the grain thinly, changing direction as necessary.

    Serve with BBQ sauce, if desired.
