Healthy Apple-Walnut Muffins

1 t. baking soda
1/4 t. cinnamon`
1/4 t. allspice
1/4 t. nutmeg
1/4 t. ginger
1/4 t. salt
2/3 C. buttermilk
2 T. oat bran
1 C. + 2 T. frozen, thawed apple juice concentrate
2 small Granny Smith apples, peeled, cored, and
1/3 C. chopped walnuts
Preheat oven to 375.
Line 12 standard muffin pan cups.
Mix together dry ingredients.
Mix eggs, apple juice and buttermilk
Stir in dry ingredients until moistened. Add apples and nuts. Garnish each muffin with an apple slice.
Bake for about 25 minutes.
