seafood avocado couscous

10 oz dry couscous
6-8 oz uncooked shrimp, peeled & deveined
6 oz uncooked scallops
1/8 tsp minced garlic
2 ripe avocadoes
salt & pepper (to taste)
prepare couscous as directed. fluff w/ fork and set aside. peel, slice, and mash one avocado coarsely w/ fork; add to couscous. eat half the other avocado. saute shrimp, scallops, and garlic in olive oil with parsley, salt, and pepper until cooked. pour seafood with liquid over couscous and stir. garnish with remaining avocado slices and parsley sprigs. serve immediately.
