Portobello Mushroom and Spinach Quiche

3-4 Portobello mushrooms
a bag of frozen chopped spinach
8oz. shredded sharp cheese
1/3 scant cup of mayonnaise
3-4 cloves of fresh garlic ( or to taste)
lite soy sauce
1 med. yellow onion chopped
Saute onion and garlic in olive oil . Sprinkle on a little bit of soy sauce, then add the chopped mushrooms and saute/ until they are tender
adding a little bit of soy sauce as you go. You don't want to drown the mushrooms just moisten them a bit. Meanwhile, drain the excess water from the spinach and add it to rest of ingredients. Bake in
your favorite pie shell at 350 degrees for approx. 30-45 minutes or until center of quiche tests done.
