Pineapple Ice Box Cake

    1/4 pound butter
    2 cups confectioner's sugar
    4 eggs, separated
    2 cups well drained crushed pineapple
    2 cups vanilla wafers, crushed
    1/2 cup nuts, chopped

    Blend butter and sugar. Add beaten egg yolks and mix. in pineapple and fold in beaten egg whites. Spread half crumbs and nuts over bottom of 24" x 12" pan and pour pineapple mixture over them. Cover with remaining nuts and crumbs Chill in refrigerator overnight, before serving.

    We used to say this was the only edible thing in the cafeteria at Drake Junior High in Arvada, Co.
