1 ounce yeast
1 1/2 cups lukewarm milk
2 tablespoons sugar
2 teaspoons salt
2 teaspoons butter
5 cups flour
Dissolve yeast in 1/2 cup milk. Put sugar, salt, egg, butter and remaining milk in a pan, add the dissolved yeast and the flour and mix everything thoroughly until the dough does not stick to the bowl. Place dough in a well-greased pan and let stand in a warm place about 35 minutes. ( It should now have doubled in volume.)
Shape into balls and brush top with melted butter. Let stand on table for 15 minutes more. With handle of wooden spoon, press the balls through the center almost cutting them in half. Brush one half with butter, fold other half over and press together like a pocketbook. Put them in a well-greased pan and allow to rise again for 20 minutes Bake in a 425ø oven for 15 to 20 minutes. Brush tops with melted butter after baking and serve hot. Makes 24 rolls.
