Breast of Chicken with Champagne

    6 chicken breasts (from 2 1/2 pound chickens)
    1 pound fresh mushrooms, sliced
    12 shallots, finely chopped
    Salt and MSG
    1 pint heavy cream
    1 pint champagne
    2 ounces butter
    1 teaspoon cornstarch, with l teaspoon water

    Butter the bottom of a cooking utensil. Sprinkle shallots cover the surface. Place chicken breasts side by side and cover with mushrooms. Season with salt and M.S.G., douse with champagne. Cover and cook until chicken is done proximately 15 minutes). Remove the chicken breasts reduce liquid to one half. Add cream, bring to boil, and thicken with cornstarch. Ladle sauce over chicken.
