Boston Cream Pie II

    --Cake--
    1/4 c Butter
    1/2 c Sugar
    2 Well beaten eggs
    1 2/3 c Sifted flour
    2 1/2 ts Baking powder
    1/2 c Milk
    1 ts Vanilla
    --Vanilla Cream Filling--
    2/3 c Sugar
    1/3 c Flour
    1/8 ts Salt
    2 c Scalded milk
    1 ts Vanilla
    --Mocha Icing--
    1 tb Vegetable shortening
    4 tb Cocoa
    1/16 c Hot coffee
    3 tb Evaporated milk
    Confectioner's sugar

    Cream butter and sugar. Add eggs. Alternate dry
    ingredients with milk. Bake at 375 for 25 minutes in 8 or 9 inch layer pans.

    Filling: In top of double boiler mix sugar, flour, salt. Add scalded milk and cook for 15 minutes until mixture thickens. Add eggs and cook 2 minutes. Cool and flavor with vanilla.

    Icing: Cream shortening, cocoa. Add coffee and blend
    in milk. Beat in gradually enough confectioner's
    sugar so that it will be creamy and stand in peaks but not too thick. A fork and lots of beating is the secret.
