Blueberry or Strawberry Syrup

    5 lbs blueberries; 2 lbs sugar; 5 oz cornstarch; 12 oz water; 1 1/2 oz
    lemon juice. Rinse drain and crush blueberries and add sugar. Refrigerate
    8 hours to allow juice to draw. Place over moderate heat; cook for 10 min.
    Add cornstarch and water. Cook till thick. Remove from heat and strain.
    Add lemon juice and remaining blueberries. Allow to cool, cover, and
    refrigerate.

    Strawberry:
    8 cups strawberries in pot and bring to boil. Pour into damp jelly bag;
    let juice drip for 2 hours. Return juice to pot combne remaining
    ingredients (lemon juice, sugar, and corn syrup). Boil for one minute.
    Pour syrup into 3 hot sterilized pint jars. Process in water bath for 10
    minutes. Or refrigerate without processing but use in a few weeks.
