Sugar Glazed Apple Pie

Pastry dough double crust for a 9 inch pie
5-6 cups peeled, cored and sliced tart apples
1/2-3/4 cups sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 1/2 teaspoons ground cinnamon
2 tablespoons butter, cut into pieces
1 tablespoon milk
1 tablespoon sugar
To prepare pie, roll out one pie dough ball into a 12 inch circle on a lightly floured surface. Ease dough into 9 inch glass or ceramic pie plate to form bottom crust. Roll out top crust in same way. Place over apples. Cut a few decorative slashes in upper crust to vent the steam. Tuck upper crust under lower crust and flute edges or press with a fork. To prepare glaze, beat togehter egg and milk in small bowl. Brush over top of pie. Combine 1 tablespoon sugar with the remaining 1/2 teaspoon cinnamon; sprinkle over top. Microwave on high 8-12 minutes or until juices start to bubble through slits in crust, rotating after 4 minutes. Transfer to preheated 425 degree oven 8-12 minutes or until crust is golden brown. Makes 8-10 servings.
