Sauteed Tomatoes with olives

    1 Tbsp olive oil
    8 plum tomatoes seeded, trimmed, cut into medium dice
    1/2 cup diced red onion
    1/2 cup diced olives (green or black)
    1/2 tsp fresh ground pepper
    4 cloves minced garlic
    1/4 tsp salt
    fresh rosemary
    1/2 tsp sugar

    Over medium heat, saute red onions and garlice til the become clear. Then add tomatoes and olives. Sauting for 3 minutes. Once tomatoes start to wilt and the rest of the ingredients. Combine well. Saute for another 3 minutes. Serve over pasta, chicken or fish. This is great on Toasted french bread or even by itself.
