Turkey Cutlets w/ Herb Mushroom Stuffing

TURKEY CUTLETS WITH HERB
4 green onions, finely chopped
1 tsp olive oil
1-1/2 c. chopped mushrooms
1/2 c. bread crumbs
3 tbl chopped fresh parsley
1/4 tsp dried marjoram
4 turkey cutlets
1/4 c. defatted chicken stock
2 c. hot cooked couscous
In lrg nonstick skillet over med heat, saute green onions in the oil
for 3 min, or til wilted. Add the mushrooms. Cook, stirring
occasionally for 7-8 min or til mushrooms have released their liquid
and it has evaporated.
Stir in the bread crumbs, parsley and marjoram.
Place cutlets flat on work surface. Divide the stuffing among them,
mounding in the center. Fold up the ends to enclose the filling.
Preheat oven to 350 deg. Coat an 8x8" baking dish with no stick
spray. Add the cutlets, seam side down. Pour the stock into the
dish. Cover with foil and bake for 20 min, or til turkey is cooked
thru. Serve with the couscous.
Makes 4 servings
Per serving of turkey and couscous: 267 cal., 3.5 gm fat, 5.2 gm
fiber, 49 mg. chol, 151 mg. sodium.
