Here's a filling meatless dish --
1 c. corn meal
4 c. water
1 med. onion, chopped
1 med. green pepper, chopped
1 clove garlic, minced
1 tbl chili powder
2 16 oz can kidney bean, drained
1 16 oz can stewed tomatoes (may be spiced ones), chopped
1 16 oz can corn, drained
1. Combine corn meal and water in a skillet. Cook on low heat til
thick, stirring often. Remove from heat and set aside.
2. saute onions, green peppers and garlic in a nonstick skillet til
transparent. Add chili powder, beans, tomatoes and corn. Simmer for
3. In a Pam sprayed 9x13" baking pan, layer corn meal mixture with
tomato-bean mixture in 3 layers, beginning with corn meal.
4. Bake at 350 deg for 45 min. Serve warm.
