Balsamic Peppercorn Vinaigrette

BALSAMIC PEPPERCORN VINAIGRETTE
(Makes one quart)
1 cup balsamic vinegar
1/3 cup fresh oregano, chopped
1/4 cup fresh basil, chopped
1/4 cup chopped Italian parsley
6 cloves chopped garlic
2 heaping tablespoons Dijon mustard
2 cups olive oil
1 teaspoon cracked black peppercorns
1/4 teaspoon salt
Place all ingredients, except the oil, in a food processor or blender and let mix for 30 seconds. With blender still running, gradually add oil. The dressing should thicken and become creamy.
Let blender or processor run an additional minute. Store, refrigerated. Dressing should last, refrigerated, for several months.
