6 cups mushroom broth or veg. broth
1 tblsp veg oil
3 tblsp chopped fresh ginger
2 large carrots, cut into matchsticks
1 medium head bok choy-slice on diagonal-1/2 inch pieces
8 oz. silken or firm tofu, cut in 1/4 in cubes
1/4 pound snow peas, out on diagonal-1/4 inches
1/4 pound bean sprouts
1 package(9oz)Chinese noodles-cooked and ddrained
6 scalllions, cut in 1 inch pieces
2 tblsp soy sauce
1 tblsp sesame oil
In large casserole, bring broth to boil. Turn off heat
In skillet, heat oil and cook ginger, carrot, and bok choy over med. heat, 10 min or so
tip carrot and veg mixture into broth-bring to boil, add tofu, snow peas, bean sprouts-cook over med heat for 2 min-add noodles -stir in scallions, soy sauce and sesame oil-ladle into bowls and serve at once-serves 4. Enjoy!
