1/2 cup pearl tapioca
1 lg orange
2 1/2 cups cold water
1/4 c sugar
prepare ahead: 1. in small bowl, cover the tapioca w/ 1/2 cup of cold water & let it soak for at least 4 hrs.
2. with a small knife, pell the orange & remove the white membrane clinging to each section. break the orange meat into small pieces.
3. have the tapioca, orange & sugar within easy reach.
to cook: in a qt sauce pan, combine 2 cups cold water with the sugar. bring to a boil over high heat, stirring until the sugar dissolves. drain the tapioca & pour it into the pan slowly, stirring constantely cook over mod heat, stirring, for 2 mins until the pudding thickens. stir in oranges and bring to a boil again. serve at once.
