2 cucumbers, peeled and seeded
1 small onion
2 tomatoes, peeled
1/2 Green pepper, seeded
1 or 2 8-oz. cans tomato sauce (for color)
1 can consomme or chicken soup. (I use College Inn
1/4 C. wine vinegar
1/3 C. olive oil
1 t. salt
1/4 t. tabasco or more to taste
grind of pepper
Cut up vegetables and place in blender or food processor with tomato sauce, consomme and seasonings. This will probably have to be done in two batches. Do not over-blend as it should be crunchy. Correct the seasonings.
You may dice some tomatoes, cucumber, and green pepper and garnish top of soup with croutons but I find this unnecessary. Chill and serve.
