1 pound great Northern beans
6 cups chicken broth
4 cloves garlic, minced
2 medium onions, chopped
1 tablespoon oil
2 4 oz. cans mild jalapenos, chopped
2 teaspoons ground cumin
1 1/2 teaspoons oregano
1 pinch ground cloves
cayenne pepper to taste
4 cups diced cooked chicken breast
3 cups grated Monterey Jack cheese
Combine beans, broth, garlic, and half of the onions in a large pot. Bring to a boil. Reduce heat; simmer until beans are tender (about 3 hours), add more broth or water as needed.
In skillet, saute rest of onions in oil until tender. Add chiles, seasonings and mix thoroughly. Add to beans. Add chicken and simmer 1 hour. Serve topped with grated cheese, salsa, and sour cream.
