3 tbls butter
1 1/4 cups potatoes, chopped
1 1/4 cups chopped onion
salt and pepper
2 1/2 cups chicken stock
2 1/2 cups cream
2 bunches chopped watercress leaf
Melt the butter in a pan. When foamy, add potatoes and onions and toss. Sprinkle with salt and pepper. Cover and cook on low 10 minutes. Add stock and cream, bring to a boil and cook until potatoes and onions are soft. Add the watercress and boil, uncovered, til the watercress is cooked. It will be soft and tender. Do not overcook. Puree in a blender. Taste and adjust seasoning.
