Vodka Sauce

    1 t. olive oil
    1 c. chopped onion
    1/2 c. chopped proscuitto
    4 cloves garlic, minced
    1/2 c. dry red wine or 2 T balsamic vinegar
    1/3 c. vodka
    1 T. sugar
    2 T. tomato paste
    1/4 t. black pepper
    2 (14.5 oz.) cans diced tomatoes, undrained
    1/2 c. fat-free half & half
    2 T. chopped fresh parsley

    1. Heat oil in a saucepan or large skillet over medium heat.
    2. Add onion, proscuitto and garlic; saute 5 minutes.
    3. Stir in wine and next 5 ingredients; bring to boil. Reduce heat to medium and cook, uncovered 20 minutes. Remove from heat.
    4. Stir in half & half and parsley. Yeild 5 cups (serving size:1 cup)
    Serve over thick, tubular pasta like penne or rigatoni.
