Veal w/ Mushrooms n baby corn

    VEAL WITH MUSHROOMS AND BABY CORN

    1 9oz pkg frozen whole baby corn
    12 fresh shiitake mushrooms (or white ones)
    2 carrots
    1/4 c. reduced sodium chicken broth
    3 tbl sherry
    2 tsp cornstarch
    1 tsp hoisin sauce
    1/2 tsp dried thyme
    12 oz veal cutlets cut 1/8 in thick
    1/2 c. sliced green onion
    1 clove garlic, minced

    Thaw baby corn and cut into 1" pieces. Slice mushrooms, julienne
    carrots,. Set veggies aside. In small mixing bowl stir together
    broth, sherry, cornstarch, hoisin sauce and thyme; set aside.

    Spray nonstick skillet generously with Pam. Cook veal cutlets over
    med heat for 3-4 min., turning once. Remove from pan. Cover and
    keep warm.

    In same skillet, cook corn, mushrooms, carrots, green onions and
    garlic for 3-4 min, or til veggies are crisp-tender. Stir broth
    mixture; pour over veggies. Cook and stir til thickened and bubbly.
    Return veal to skillet; heat thru.

    Makes 4 servings
    202 cal., 4 g fat, 69 mg choles, 179 mg sodium, 17 g carbo, 4 g fiber,
    22 g protein
